Protein er ikke et bestemt stof, men flere forskellige, der har det tilfælles, at det er opbygget af aminosyrer. Aminosyrerne skal findes i et bestemt indbyrdes forhold, for at dyrene kan få det bedst mulige udbytte af foderet.
